Prunus Domestica are the most produced fruit in Serbia. Probably because of Šljivovica But I never liked them and was a little stuck with these plums from my relative’s farm. There is actualy one food that I like plums in and those are Serbian potato dumplings with plums, but my grandmother never wrote down her recipe and after she passed away I never tasted dumplings good enough for me to make them again. So, why not make Dorie Greenspan’s Dimply plum cake? After all, I might be the only food blogger that hasn’t tried it yet ;) Well, just not to bore everyone again, I made it with chocolate. It turned out wonderful. The batter reminds of a cake my mother makes all the time with sour cherries.
Chocolate Dimply Plum Cake
adapted from Baking: From My Home to Yours by Dorie Greenspan
150 g flour
2 tsp baking powder
70 g butter
100 g dark chocolate
2 large eggs
80 g brown sugar
zest of one lemon
60 ml oil
Whisk the flour and baking powder together.
Melt chocolate and butter in a double boiler.
With a mixer beat eggs and sugar for about 3 minutes. Add lemon zest, then chocolate and then oil, beating for 1 minute after each addition.
Reduce the mixer speed to low and add the dry ingredients.
Scrape the batter into the 36×25 cm pan and smooth the top. Arrange the plums cut side up in the batter.
Bake in a preheated oven on 180°C for about 30 minutes or until it’s done.
