180 g grated quince*
90 ml oil
220 ml quince juice
50 g sugar
200 g flour
2 tsp baking soda
1/2 tsp baking powder
a little salt
*Quince can be substituted with apples or pears. Then you should put apple or pear juice. Also, if you don’t have juice at hand you can use just water.
Puree grated quince, oil, juice and sugar in a blender. Transfer into a bowl. Sift in flour, baking soda, salt and baking powder. Carefully stir with a whisk. Grease bundt cake pan, add a few tablespoons of flour and shake so the flour coats the inside of a pan. pour in the batter. Bake in a preheated oven on 180&C for about 40-45 minutes, or until a toothpick inserted comes out clean. Dust with powdered sugar before serving.

What a great recipe. I just read that quince should only be ingested after being cooked. I would love to make this recipe.
Thanks for sharing – great reminder for me to bake more with quince! Love the picture with the orange flowers. Nice presentation.
That is one gorgeous cake! There have been quince at our farmers market here, but I didn't have a reason to buy them – until now!
Isprobala ja :)Mogu samo da preporučim i drugima da probaju obavezno!
What a great recipe. I've never used quince and am excited to give it a try!
Oh this looks so mouth watering. I'm going to try it with apples.
I loved this cake and i'm thinking doing it tomorrow.I just have 2 questions: when do we add the oil and doesn't it need eggs?:)
@gasparzinha – Thanks for noticing about oil, it was a typo and I have corrected it. You add it at the beginning. It doesn't need eggs because it's vegan. I made it for the fasting menu. Hope it turns out ok and let me know how you liked it when you make it
Found this cake while looking for recipes. It looks so wonderful – I'll definitely have to try it at some stage
