Spinach and Pear Salad

I didn’t post much this summer. You have to forgive me, as it’s been a wonderful summer in the Baltics. And this year it was particularly beautiful in Estonia. We had an unusually hot days, and the Baltic sea was warm, we traveled through the countryside and I’ve been to St. Petersburg again.

Raspberry Palmiers

Ah, palmier! Probably the world’s easiest dessert, considering the concept and the preparation. The only thing that is easier than making this is going to the store and buying something already made. But please don’t. No mater how simple they seem, palmiers are amazing even if they are made the most basic way – only with sugar. And let me tell you, they go surprisingly well with ice cream :)

Cold Smoked Trout Pizza Tart

When it comes to smoked fish, the most will agree that salmon is the king. A little less known fact is that there is an equally tasty, but a bit cheaper alternative – the trout. Hot smoked trout will make a serious salad for example, and the cold one is best for making canapes and small bites. The easiest way to serve cold smoked trout would be on a piece of toasted bread, with butter and some trout caviar. At least, it’s how I usually eat it these days. The recipe that I’m sharing is also fairly easy to prepare, and the flavors are working fine together.
