Rosemary Scented Strawberry and Red Grapefruit Popsicles

Making fruit popsicles is a no brainer. Mix fruit of your desire and sweeten with simple syrup.

But still, I always feel the need to add them a little bit of something different. The most obvious way would be to tweak the simple syrup. You can add herbs, citrus peel or even spices to give it a hint of unexpected flavor.


Rosemary Scented Strawberry and Red Grapefruit Popsicles

Ingredients for Rosemary Simple Syrup:

250 ml / 1 cup water
250 g / 1 cup sugar
3 rosemary branches

Ingredients for Popsicles:

500 g / 18 oz strawberries (fresh or frozen doesn’t matter)
juice of 1 large red grapefruit
rosemary simple syrup

Instructions:

Prepare the rosemary simple syrup first. Cook sugar, water and rosemary in a small pot until it gets proper simple syrup consistency. Remove from heat and let cool. When cooled, strain into a small bottle.

Puree strawberries with grapefruit juice in a blender and then sweeten with rosemary syrup to your taste.

Pour into popsicle molds and freeze. Don’t insert the wooden sticks right away, wait for te ice cream to start freezing a bit because then the sticks won’t sink into the mold.

Makes about 8 popsicles.

In case you’re up for a different kind of refreshment, you can transform this recipe into a cocktail easily. Prepare simple syrup and strawberry and grapefruit puree according to the recipe, but instead of pouring it into the molds, freeze it in a larger container. Don’t wait for it to freeze completely but only to start forming ice on the edges of the container, that is when it’s cool enough and you should start preparing your cocktails. Pour some strawberry and grapefruit mix into the glass (half of glass should do), add 1 oz / 30 ml Malibu coconut flavored rum and 1/2 oz / 15 ml Cointreau. Pour chilled sparkling water to the top and stir.
