Stuffed Trout

Stuffed Brown Trout
2 brown trouts
3 medium sized potatoes
2 Tbsp basil
2 Tbsp cilantro
1 onion
1 clove garlic
bread crumbs
lemon juice
sesame oil
salt
pepper

Wash fish thoroughly. Remove the scales. Cut it on the back side, along the central bone, from head to tail. Remove the central bone and clean out the stomach cavity. Wash it again and wipe with a paper towel.

Cook the potatoes then peel them and cut into small cubes. Finely chop basil and cilantro and along with the chopped garlic and onion add it to the potatoes. Mix everything and season with salt and pepper. Add 2 Tbsp of sesame oil.

You can substitute cilantro with parsley leaves and sesame oil with palm or olive oil.

Stuff fish with the potato stuffing, sprinkle with bread crumbs, lemon juice and some oil and tie it with a thin rope soaked in water (to prevent burning inside the oven).

Bake in a preheated oven on 180°C for 20-25 minutes.

    Oh man, that is great looking!! It’s such a beautiful presentation and it sounds delicious. I just had a trout yesterday but I just pan-fried it whole.

    Not to just echo everyone else, but this presentation is really a surprise. I’ve never seen a fish stuffed “right side up.” It’s like it could just swim up to you and offer you some potatoes.
