I didn’t post much this summer. You have to forgive me, as it’s been a wonderful summer in the Baltics. And this year it was particularly beautiful in Estonia. We had an unusually hot days, and the Baltic sea was warm, we traveled through the countryside and I’ve been to St. Petersburg again.
Next post will be about St. Petersburg visit, til’ then here is one quick salad recipe
Spinach and Pear Salad
Ingredients:
a bundle of fresh spinach (enough to fill a bowl)
3 thin prosciutto slices
1/2 pear
30-40 g goat cheese
a handful of walnuts
Dressing:
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon white wine vinegar (you can substitute it with some other vinegar)
1 teaspoon honey
1 teaspoon (whole grain) mustard
salt and pepper to taste
Instructions:
Fry prosciutto in a pan with a very little oil and then tear it into bite sized pieces.
Toast chopped walnuts in a same pan.
Mix all the ingredients for the dressing.
In a bowl mix spinach, sliced pear, prosciutto, walnuts and pieces of goat cheese. Right before serving, stir in the dressing.
Notes:
Serves one.
