Amuse-Bouches by Gaga

Amuse-Bouches
More treats from Gaga’s blog :) After having wonderful Torte Egyptian, I decided to try out more Gaga’s recipes. I made these amuse-bouches for the Orthodox New Year that was on January 13th. Needles to say, they were amazing!

Three Color Savory Cake

Three Color Savory Cake
(original recipe)

Biscuit 1: Beat 1 egg until foamy. Add 25 ml oil, 1/4 tsp salt, 60 ml yogurt and 1/2 tsp baking powder and beat just enough to incorporate. Slowly fold in 4 Tbsp flour. Bake in 20 cm diameter spring form pan in a preheated oven on 180°C for about 15 minutes.

Biscuit 2: It is the same as for the biscuit 1 just add 1/2 tsp paprika dissolved in oil.

Biscuit 3: It is the same as for the biscuit 1 just after you fold in flour, add 2 1/2 Tbsp chopped spinach.

Filling: Beat 50 g butter, add 250 g soft white cheese and beat some more. Add 150 g finely diced ham, 1 Tbsp finely chopped flat leaf parsley, 2 small chopped pickles, 1 cooked carrot.

Assembling: Biscuit 2, 1/2 filling, biscuit 3, 1/2 filling, biscuit 1. Spread sour cream on top.

Poppy Seed Roll

(original recipe)

Beat 4 egg whites with a pinch of salt. Carefully fold in 4 Tbsp flour and 2 Tbsp poppy seeds. Bake roll in a preheated oven on 180°C for about 15 minutes. When it’s out of the oven, quickly roll it and wrap in a wet cloth. Leave to cool completely.

When the roll is cooled, mix 50 g soft white cheese with 3 Tbsp sour cream and spread over roll. Place thin slices of ham over followed by thin slices of Trappist cheese. Roll again, wrap in foil and leave in the fridge overnight.

Savory Truffles

Savory Truffles
(original recipe)

Cook (or fry) 300 g boneless, skinless, chicken breasts. Puree it with 1 cooked parsley root, 1/4 cooked celery root, 2 small pickles. Add 100 g soft white cheese, 25 g grated Trappist cheese, 1/2 Tbsp mayonnaise, 1/2 Tbsp sour cream. Mix everything well and make truffles. Place one red pepper stuffed olive inside every truffle. Roll each truffle in flour, then in beaten egg and then in sesame seeds. Fry on some oil until sesame becomes golden.
