Carob Crepes

For the crepés: 70 g ground carob, 150 g graham flour, 150 g white flour, 1 Tbsp cocoa powder, 3 Tbsp brown sugar, 3 eggs, 250 ml chocolate milk, 100 ml heavy cream, 1 Tbsp honey, water as needed

Place all the ingredients except water in a large bowl and whisk into homogeneous mass. Now, add enough water to make the dough as for regular crepés (I have added around 350 ml, but start little by little). Place in a fridge to rest for about half an hour and then fry on a non stick pan without adding any fat. This recipe makes 16 26cm diameter crepés.

Peach filling: Peel 4 medium sized peaches and dice. Heat a cube of butter in a pan, add peaches and 2 Tbsp brown sugar and cook until sugar melts. Add some cinnamon and 1/2 Tbsp Cognac and wait for the alcohol to evaporate. This will be enough to fill about 3-4 crepés. I made a sour cherry/clove/rum version also, but I liked peach more. Serve topped with some maple syrup.

    Marija, these look so good. I like the idea for both of the fillings. Sour cherries (a rare find here) and peaches always work for me:)
