Two years ago, Estonia had a proper winter. This year there is still no snow.

The cold has grown onto me.

I love how the Baltic sea freezes and the ice forms into roads that connect islands and the mainland. I love the Old Town under the snow.

So, let’s have some cookies until it snows!

Snowflake Sugar Cookies

Ingredients for the cookies:

230 g / 8 oz butter
120 g / 4 oz powdered sugar
1 egg
2 teaspoon vanilla extract
1 teaspoon salt
310 g / 11 oz flour

Ingredients for the icing:

200 g / 7 oz powdered sugar
1 egg white
1 teaspoon corn starch
1 teaspoon lemon juice

Instructions:

With a mixer beat the butter fluffy. Add sugar and mix more to incorporate. Add the egg, mix some more. Finally add the remaining ingredients and knead into a dough. Put dough into a freezer bag and chill in the fridge just until it hardens so you can work with it.

Roll the dough to the 0.5 cm / 1/4 inch thickness on well floured surface and cut with a cookie cutter. Bake in a preheated oven on 190°C/375°F for about 8-10 minutes. Be careful that the cookies don’t burn, they should stay pale. When baked let them cool completely.

While the cookies are baking, prepare the glaze by mixing together all the ingredients. Use it to glaze cooled cookies.

This glaze works with food colorings, i just wanted my snowflakes to stay white.

Note: I’ve been asked about the cookie cutter. Here you can see the photo of the one I used, the closest looking one I managed to find online is this one.
