Fried Apples

A couple of years ago we had CanalSur on cable. And there was a cooking show Con Sabor Andaluz hosted by Manolo Rincó. That food was mind blowing! Seriously! I wanted to make every single recipe he presented. My cable operator canceled that channel and all I had left was The Naked Chef part something and let me tell you, Jamie is sexy, but the food part – it just was no fun anymore. Back to Manolo, if someone makes you like a dish prepared with the food you hate than he must be pure genius. I really really hate apples, but in this recipe, it’s like we’ve been in love for my hole life! Damn you cable operator! I want that show back!

Fried Apples

Fried Apples
(recipe adapted from Manolo Rincó)

3-4 Granny Smith apples
sugar
1 Tbsp soured milk*
powdered milk
3 egg yolks
clear apple juice
juice of one lemon
sunflower oil
peanut oil

*If you need a substitute for soured milk, the best would be low fat soured cream (I’m saying this based on the way these two products are made in Serbia, if you’re not sure, use a fermented milk product of your choice).

In a bowl mix 3 1/2 Tbsp powdered milk, 2 Tbsp water and 1 Tbsp soured milk.

Cook egg yolks with 3 Tbsp sugar and some apple juice in a double broiler until it thickens.

Peel the apples, core them (using apple corer) and slice. Sprinkle with lemon juice and then with a lot of sugar. Combine 100 ml apple juice and 100 ml sunflower oil in a bowl, add about 5 Tbsp flour (batter soul be slightly thicker than for crepes). Heat peanut oil in a pan for deep frying. Soak each apple slice into the batter and fry until golden. Drain on a paper towel.

Serve apples warm, with both sauces, sprinkled with powdered chocolate.

    These sound seriously delicious. In the U.S. we would use buttermilk (soured milk) and most likely do the frying in canola oil.
