I got a jar of delicious homemade lemon jam by Vanylica recently. As soon as I brought it home, I hid it in the farthest corner of the fridge and I explicitly told my family that this precious treasure of mine will not be used for anything else but some nice dessert. And so I thought and thought, and finally decided to make this glazed chicken and then some petite fours, but when I took the jar out of the fridge there was only a quarter left!? It seems that each member of my family had his part in this accident, as they’d eat a teaspoon from time to time. They thought I won’t notice a teaspoon is missing ;) I don’t blame them, that jam was damn good!
Lemon Glazed Grilled Chicken Salad
500 g chicken drumsticks (bones removed)
4 Tbsp lemon jam
1 tsp mustard
1/2 tsp powdered ginger
salt
ground black pepper
Vegeta seasoning
1 small red onion
1 medium head Lollo Rossa lettuce
4-5 small red radishes
olive oil
vinegar
Rub the meat with Vegeta on both sides. Take 2 tablespoons of lemon jam and spread over the meat. Leave in the fridge overnight.
In a large bowl, combine lettuce, thinly sliced onion and sliced radishes. Season with olive oil, vinegar and salt to taste. In a small bowl combine 2 tablespoons of lemon jam, ginger and mustard and season with salt and pepper to taste. Grill the drumsticks. After they’re done, slice them and spread the glaze you prepared over the pieces of the chicken. Place some salad you prepared on a plate and top with chicken. Enjoy!
