Pasta with Sausage and Mustard

Can’t say that I grew up loving pasta. Except for my mothers awesome carbonara, the recipe I will share once here, it all came to over boiling pasta and eating it with saucy dishes. I know better now but can’t say I eat pasta often even now. Usually, there is a recipe I’m obsessed with at the moment and make it often and then forget about it and find another. This is my current favorite pasta :)

Pasta with Sausage and Mustard

500 g medium pasta shells
1 Tbsp olive oil
700 g hot sausages, meat removed from casings
200 ml dry white wine
200 ml heavy cream
3 Tbsp grainy mustard
hot pepper flakes
fresh mint or basil
salt and pepper to taste

Cook pasta al dente in pot filled with salted water. While it’s cooking prepare the sauce.

Heat olive oil and add crumbled sausage. Fry on high heat until done. Pour in the wine and cook until it reduces by half. Then add heavy cream, mustard, stir and taste and add some pepper flakes to taste. If needed, season with salt and pepper. Heat through and remove from heat.

Stir in pasta and serve immediately with some herbs tossed over.
