Weekend Wokking is a world-wide food blogging event created by Wandering Chopsticks celebrating the multiple ways we can cook one ingredient. Every month the current host gets to pick the secret ingredient for the next round. Last month it was tomato, hosted by Blazing Hot Wok and Darlene chose eggplant for this month. This roundup is very special to me since it is my 100th post! Can’t believe I got this far! Thank you everyone who visit and comment, you make me very happy!

The first entry came from Wandering Chopsticks. It is Ca Tim Nhan Cha Tom (Vietnamese Eggplant with Shrimp Paste).
Anne from nikkipolani made a compilation of her favorite recipes and came up with this great Eggplant & penne dish.
Prof. Kitty from The Cabinet of Prof. Kitty send this beautiful Cold soba salad with eggplant with the most unusual garnish – Nasturtium.
Another pasta dish comes from Yasmeen from Health Nut – Gingered Eggplant & Snap Peas Pasta.
Darlene from Blazing Hot Wok made this outstanding Thai Eggplant Stir-fry with Chicken.
Now, this is the most creative entry this month – Eggplant Clafouti by [eatingclub]vancouver.
From Laura comes a classic French dish, tweaked Eastern style and fryied in a wok: Eastern-GreenTatouille with a step-by-step photos.
Ning from Heart and Heart made Japanese inspired Eggplant Miso.
Mochachocolata-Rita send a perfect snack – Baked Spiced Eggplants with Tamarind Dip.
Wiffy from Noob Cook makes this cute Stir fry Eggplants with Egg & Tomatoes.

Foodycat recommended this post to me and I’m so glad she did! Eggplant has been the bane of my cooking this summer! It keeps coming in our CSA box and I keep struggling to make it palatable.
