1 large onion, finely chopped

4 small zucchinis
1/3 cup rice
150 g Feta cheese, squashed with a fork
4 cloves garlic, minced
2 eggs
8 medium bell peppers, stems and seeds removed
powdered ginger
dried fennel leaves
oregano
salt

Cook onion on oil and a little water and salt covered, until it softens. Add grated zucchinis, and continue to cook covered until zucchinis soften on medium heat. Reduce heat, add rice, cheese, garlic, seasonings to taste and eggs. Stir well.
Remove from heat and fill peppers with zucchini mixture. Place them in a pot. Make sure they all touch the bottom of the pot. Pour some water into the pot (just enough to cover the bottom). Cook for about 20-30 minutes covered on low heat.

This sounds delicious. I love both zucchini and feta – so those combined as a filling for stuffed peppers look great! The peppers are an interesting color though… what color are they, not quite green and not quite yellow…
Yeah Jenn, when I think of it now, it is a strange color :). I’m just used to those peppers since they are the most common peppers here. We have to wait till the end of the summer for the red ones. Though, there are green, yellow, orange and red in supermarkets, but I don’t like to buy those, I prefer farmers market.
This looks great! we stuff peppers with meat, but this version sounds interesting too. a must try. yum!

Ooh, I like this. I would have never thought of adding grated zucchini as a filling. The peppers remind me of the kind I ate in Hungary.
Very interesting entry; you do come up with the most interesting things. Do you ever read a blog called Almost Turkish Recipes? Your way of cooking reminds me a lot of the things Burcu cooks. This sounds delicious; I’m sure I would like it.
Kalyn, I just checked out Almost Turkish Recipes and you were right! I do like it! I think the main reason our cooking is similar is the fact that Serbia was Ottoman Empire vassal country for 500 years. During that time Serbian cooking was very much influenced by Turkish. For example this is how Tulumbe & Tufahije got to Balkan.
