4 medium sized atlantic mackerels, cleaned
2 cloves garlic
1 bundle of parsley leaves
1 large green or yellow bell pepper
about 16 cherry tomatoes
olive oil
salt
ground black pepper
Finely chop garlic and parsley. Mix together. Rub fish with it on the outside. Dice bell pepper. Take four large pieces of baking paper and place one fish in the middle of each one. Top with bell pepper and tomatoes cut in quarters (about 4 for each fish). Season with oil, salt and pepper. Wrap each fish tight and tie with a kitchen rope. Bake in a preheated oven on 200°C for about 15 minutes.

I appreciate whole fish and it does look good! Mackerel is a fabulous fish.

Such a simple texhnique but fish done in this way always comes out perfectly moist for some reason.
