Fried sausages with onions, served with wine and arugula. Perfect in their simplicity!
Fried Sausage with Onions, Mushrooms and Bread

600 g fresh, hot sausage
2 red onions
1 tsp dried thyme
20 g dried shiitake mushrooms
1 Tbsp red wine vinegar
2-3 slices of old bread
Soak mushrooms in hot water, peel and cut sausages. Slice the onions thick and fry on a splash of olive oil and a pinch of salt. Add vinegar and continue to fry for a couple of more minutes. Squeeze out the water from the mushrooms. Add them to the pan with sausages and thyme. Fry until the sausages are done.
Toast the bread, tear into bite-sized pieces and transfer into a bowl with sausages. Season with salt and pepper to taste.
Serve with arugula.
