Pork and Fava Bean Stew

Pork and Fava Bean Stew

Pork and Fava Bean Stew

(recipe adapted from Sale & Pepe magazine, Serbian issue for November 2007)

400 g boneless pork
100 g dry fava beans
1 carrot
1/2 tsp dry rosemary
1 celery stick
1 onion
200 ml milk
1 Tbsp flour
clear broth
1 tsp dry parsley leaves
10 g butter
olive oil
salt and pepper

Soak beans overnight. On the day of the preparation peel each bean.

Finely dice onion, carrot and celery stick. Heat some oil and butter in a pan and saute diced vegetables and rosemary until soft. Add diced pork and fry for about 10 minutes, then add flour and stir. Add salt and pepper and milk. Let simmer for about half an hour on low heat. If too much liquid evaporates, add broth.

Add peeled fava beans and cook until the beans are soft. At the end stir in parsley.

Soup? Is this referring to broth? When it says to add soup?

Odličan izbor recepta i mahunarke. Zaposavljene je kod nas čak i pomalo zaboravljena. Na pijaci zemunskoj samo jedan deka prodaje bob! Odlično Marija!

Congratulations on the new blog! Although I must admit I kinda liked the old one, with that top ribbon where I could find everything I wanted in no time. Oh well, I guess I must adjust… *sigh :-)

FlyingRoo, the ribbon will be back, don’t worry. I’m working on that :) I’m on vacation at the moment and getting internet access isn’t easy, so I’m working slowly :)

Um, yea! What time is dinner? We don’t make enough fava beans in the US. I remember how much bean salads we ate in Italy on a trip once and continued making them when we returned… for like 6 weeks. I’m going to eat more beans.
