Traditionally, Serbians prepare wheat like this for the patron saint day. To offer the guests when they come in. It is also made for the funerals, even weddings… But no cream traditionally. Cream was added later. When they started to sell it in pastry shops. Wheat and cream reminds me of childhood. Of old socialist Yugoslavia. Of the times of Brotherhood and Unity. When everyone was happy. Today, you are my guests and I offer you some of it. Welcome!
Wheat and Cream
500 g wheat berries
250 g ground walnuts
250 – 500 g powdered sugar
1 bag vanillin sugar (10 g, optional)
Cook wheat in boiling water for 20 minutes. Leave it covered and wrapped in a blanket overnight.
In the morning strain the water, but don’t throw it away yet. Grind wheat in meat grinder. Add sugar and walnuts. Start with 250 g sugar and add more to taste. Optionally, add vanillin sugar. If it’s too thick, add some water from the cooking that you saved after straining.
Serve topped with whipped cream.
