Quick New Potato Roasties

If you roast a piece of meat in the oven the obvious thing to do with the drippings is to make a gravy. But sometimes, just sometimes, you just don’t feel like spending another minute to prepare the gravy, and you want to feast on the roast. And that’s how a bowl of drippings ends up in the fridge. You might use it to give your new potato roasties a kick and a flavor of a roast :)

It’s really easy. And not really a recipe. Just an idea. And yesterday’s lunch.

Quick New Potato Roasties

1-1,3 kg new potatoes
roasting drippings, slightly warmed

Preheat oven to 220°C/430°F. All you have to do is to half the potatoes, or cut them into equal pieces if they’re a bit bigger. Pour the drippings over and put everything into the oven.

Roast for about 20 minutes. About half way through, flip the potatoes so they can soak the juices all over.

Note: For example, if you roast a pork but that’s been rubbed with mustard, garlic, dried rosemary, thyme, salt, pepper and whatever more you like, the drippings will be divine :-D
