Lately I’ve been making a lot of fast and easy recipes. Partly because I’ve gotten a bit lazy, but mostly because a lot has been going on… So when you crave something sweet, and you want it to be a super fast recipe, there is nothing better than puff pastry. This time I played it safe and went for the good old chocolate and cherries combo. Super delicious!
Fast Cherry Puff Pastry Chocolate Pie
Ingredients:
1 piece of puff pastry dough
220 g drained, pitted sour cherries
70 g dark chocolate chips
50 g brown sugar + more for sprinkling
1 tablespoon corn starch
1 egg
2 tablespoons water
Instructions:
Roll puff pastry into a thin rectangle.
Mix sugar and corn starch with cherries.
Place the cherry mix in the middle of the rectangle and toss chocolate chips over. Wrap tight and then transfer into a baking pan lined with baking paper, so that the folded part is down.
Brush with a mixture of egg and water, make a few cuts on the top and sprinkle with sugar.
Bake in the oven according to the instructions from the puff pastry dough package until you see that the dough is baked properly.
Eat while still warm.
Recipe was published in Mezze magazine, September 2014 issue.
