Flourless Chocolate Cake

This is one of the cakes I make the most often, but still, haven’t published the recipe on my blog yet. Flourless, but a serious cake that can satisfy even the biggest chocolate lover. It is flavored with a liqueur, and I use my homemade orange liqueur, but you can use any other you like, rum for example. The cake will rise nicely in the oven but the moment you take it out it will sink. That is fine, and that is how it should be :) Around the edge of the pan you’ll have a nice higher crust, and the center will be soft. It is also nice to bake two smaller cakes and share it with a loved one while still warm. With a spoon, straight from the pan. And save the other one for later :)

Flourless Chocolate Cake

(Sale & Pepe Serbia, May 2007)

300 g dark chocolate
300 g butter
150 g sugar
1 Tbsp orange liqueur
6 eggs
a pinch of salt
butter and flour for the pan

In a double boiler melt chocolate with butter. Separate egg whites from the yolks and then beat the yolks with sugar with a mixer until light and fluffy. Whisk in the melted chocolate and butter.

Beat the egg whites stiff with a pinch of salt, and then carefully fold into the chocolate batter.

Butter and flour 24 cm diameter tart pan and pour the prepared batter in. Bake in a preheated oven on 180°C/350°F for 20 minutes.

Eat cold or warm :)
