When I think of a cake, I think of Bounty. A must on every birthday in my family for years, and still everybody’s favorite. It entered our lives during the 1990-es, when my mother got the recipe from our neighbor. The ’90-es were the years of economic sanctions and very shitty times for all the Balkans, so people got very inventive in making copycat recipes of the famous sweets. It was either too expensive or impossible to find, but hey, no problem, we’ll make it ourselves Funny thing is that this recipe came from a person who wasn’t a good cook at all and mom had to tweak it a lot to suit our taste. This is one of the cakes I make the most often, but still, haven’t published the recipe on my blog yet. Flourless, but a serious cake that can satisfy even the biggest chocolate lover. It is flavored with a liqueur, and I use my homemade orange liqueur, but you can use any other you like, rum for example. The cake will rise nicely in the oven but the moment you take it out it will sink. That is fine, and that is how it should be Around the edge of the pan you’ll have a nice higher crust, and the center will be soft. It is also nice to bake two smaller cakes and share it with a loved one while still warm. With a spoon, straight from the pan. And save the other one for later
