You need something like this on a lazy Sunday. Muffins – because they’re simple, cinnamon – because it will warm you up and apples – ’cause everything will be juicier with them. And if you go to the country side, you can sit in front of your fireplace and enjoy these beauties with a cup of warm milk.
Apple and Raisins Muffins
200 g flour
80 g ground almonds
250 g peeled and cored apples
2 + 4 tsp lemon juice
150 g yogurt
1 tsp ground cinnamon
160 g sugar
a pinch of salt
1 bag vanillin sugar
3 tsp baking powder
8 Tbsp oil
2 eggs
60 g raisins
Mix together flour, ground almonds and baking powder. In a separate bowl mix 100 g finely diced apples, 50 ml yogurt, 2 tsp lemon juice and cinnamon. Grate the remaining apples, mix them with 100 g sugar, salt, vanillin sugar, oil and the remaining yogurt. Stir in the eggs, flour mix, apple and cinnamon mix and raisins.
Grease and flour a muffin pan and fill the holes with batter to the 2/3. Bake in a preheated oven on 350°F/180°C for about 25 minutes.

I tried them out yesterday and they came great. Super moist and really tasty. Everyone loves them. Even my husband who hates apples loves them
